Banana Oatmeal Pancakes

Gluten Free
  • 1/2 cup milk, almond milk or oat milk

  • 2 Eggs

  • 1 Egg White

  • 1 Banana

  • 2 Tablespoons Real Maple Syrup

  • 1 1/2 cups Rolled Oats

  • 2 Tablespoons Icelandic style yogurt.

  • 2 teaspoons Baking Powder

  • 1/4 - 1/2 teaspoon Salt

  • 1 teaspoon Vanilla

-Place 1 cup oats In a food process blender, mix until they resemble flour. Then pour in milk, eggs, egg white, banana, yogurt, maple syrup, vanilla (optional), 1/2 cup oats, baking powder and salt.

-Blend until smooth.

-Heat skillet over medium heat. Once warmed, butter or spray with non-stick cooking spray.

-Pour about 1/4 cup batter onto skillet.

-Cook for 2-3 minutes on each side.

-Drizzle with real maple syrup and toppings of choice- I like a dollop of Icelandic yogurt, sliced bananas, blueberries, or a little granola!
