One Pot Pasta Spinach & Salmon

  • 350 g thin spaghetti or angel hair pasta

  • 3/4 cup fresh spinach

  • 1 cup smoked salmon

  • 2 large shallots thinly sliced

  • 2 garlic cloves thinly sliced

  • 4 tablespoons heavy cream

  • 1 vegetable stock cube

  • freshly ground black pepper

-Cook pasta according to directions on box. Drain water but leave about 1/2 cup at bottom of pan.

-Put the remaining ingredients into the large pot or dutch oven and bring to simmer over medium heat.

-Cook for approximately 15 minutes, stirring regularly.
