1 cup whole milk
2 cups heavy whipping cream
3/4 cup sugar
3 1/2 cups frozen sweet bing cherries (make sure they are pitted)
5 tablespoons cherry juice from the frozen cherries
Puree 3 cups of the frozen cherries in a blender and set aside.
Heat the milk in a saucepan over medium-high heat until it begins to simmer and foam.
Once the milk begins to simmer, remove it from the heat.
Start mixing in the sugar, cherry juice, and cherry puree.
In a large bowl whip heavy whipping cream with a mixer on medium speed until firm peaks form.
Fold the whipped heavy cream into the mixture.
Pour mixture into loaf pan and add remaining whole cherries.
Place in freezer for 30 minutes.
Take the gelato out the fridge and whisk it every 30 minutes for the first two hours.
Leave in freezer overnight.
Scoop it up and ENJOY!
