Iced Oatmeal Cookie Recipe
1 1/2 stick butter
1 cup brown sugar
1/2 cup sugar
1 tsp vanilla
1 tbsp maple syrup
3/4 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt
2 cups old fashioned Oats- ground in food processor or blender
1 1/2 cup flour
1/3 cup Butter, softened
3 cups Powdered sugar
1-3 tbsp milk
1 1/2 tsp Vanilla or gingerbread schnapps
Preheat oven to 375 degrees.
Line baking sheet with parchment paper.
In a large bowl Cream butter, brown sugar and sugar together until light and fluffy. Add egg and vanilla.
Stir in baking soda, baking powder and salt.
In a food processor blend 2 cups of oats until finely ground.
Add oats and flour to mixture.
Form a ball with batter- about 1 1/2 inch in diameter. Place on cookie sheet and Flatten with your hand or a spoon. Should be about 1/4 inch thick.
Bake 10-12 minutes until cookies are golden brown. Cool on cookie sheet for several minutes before transferring them to rack to cool completely. Decorate with buttercream icing.
