2 cups all-purpose flour
1/2 cup sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup cold butter
1 egg- large
1/2 cup heavy cream or half and half
2 tbsp lemon juice
1 tsp vanilla
1/2 tbsp lemon zest
Swedish pearl sugar
1 cup powdered sugar
1 tbsp lemon zest
3-5 tbsp lemon juice
Preheat oven to 425F. Line baking sheet with parchment paper
Mix dry ingredients in large bowl. Add cold butter using fork of pastry cutter until mixture is like fine crumbs.
Mix cream, egg, lemon juice, lemon zest, and vanilla.
Pour into dry mix. Do not over mix.
Place dough on lightly floured surface. Knead 4 or 5 times.
Pat dough into 8 inch or 9 inch circle roughly 1 inch thick. Cut into 8 triangle shaped pieces. Place on baking sheet. Sprinkle with sugar.
Bake for 12-15 minutes- until golden brown. Cool. Glaze
