Overnight Blueberry French Toast
1 ½ Cubed Brioche or French Bread loaves
1 Package Cream Cheese
3 Tbsp Milk
1 ½ Cup Powdered Sugar
1 ½ Cups Blueberries
1 Cup Milk
5 Eggs
2 Tbsp Vanilla
½ Tsp Cinnamon
¼ Cup Maple Syrup
Blueberry Syrup
2 Cups Blueberries
1 Tbsp Lemon Juice
1 Tbsp Lemon Zest
½ Cup Sugar
¾ Cup Water
2 Tbsp Cornstarch (optional)
Preheat oven to 375° degrees. Butter 13x9 pan.
Spread half of the bread cubes into an even layer on the bottom of the pan. In a medium bowl mix cream cheese, powdered sugar and milk until combined. Should be frosting consistency. Pour over bread cubes. Sprinkle 1 cup of blueberries. Layer remaining bread cubes over the top.
Whisk together 1 cup of milk, eggs, vanilla, cinnamon and maple syrup. Pour mixture over bread cubes. Sprinkle remaining blueberries over the top. Cover with foil and refrigerate overnight.
Remove casserole from fridge 15-30 minutes before baking. Then bake covered for 45 minutes. Remove foil and bake for an additional 30 minutes. Prepare blueberry syrup by combining ingredients in a saucepan. Serve casserole with warm blueberry or maple syrup.
