Salted Caramel Banana Chocolate Chip Ice Cream
No Ice Cream Maker Necessary
1/2 cup sugar
3 tbsp butter
2 1/4 cups heavy cream
1 tsp sea salt
14 oz can of sweetened condensed milk
1 tsp vanilla
1-2 bananas, diced
1/2 bag chocolate chips
In saucepan heat sugar over medium heat. Stir constantly with a wooden spoon until it changes to a golden brown color and turns to a liquid. Add butter, stirring until it is completely melted.
Slowly stir in 1/4 cup of heavy cream. Allow the mixture to boil for 1 minute. Remove from the heat and stir in the salt. Careful mixture is VERY HOT!
Place the saucepan filled with salted caramel over a bowl of ice and let it cool to room temperature.
In a medium bowl mix remaining 2 cups of Heavy Cream with mixer on medium-high until firm peaks form.
Remove 1/4 cup of the cooled caramel and put to the side.
Mix in sweetened condensed milk and vanilla. Fold the heavy whipped cream into the mixture. Add bananas, chocolate chips and drizzle in remaining caramel. Transfer to a 2 quart container. Cover and freeze overnight.
