Cherry Clafoutis
1 ¾ cups pitted cherries
3 eggs- no eggs if making vegan version
½ cups Icelandic style yogurt- for vegan version
1 ½ cups silken tofu
1 cup milk or soy milk
½ cup sugar
½ cup all purpose flour or 1 cup oat flour Vegan version add ¼ cup cornstarch
¼ cup butter, olive oil, or margarine
3 tsp vanilla
½ tsp salt
Zest of half a lemon- vegan version also add juice
Powder sugar for dusting (optional)
Toasted sliced almonds for garnish (optional)
Preheat oven to 350 degrees
In a bowl, combine the eggs, milk, yogurt, granulated sugar, flour, salt, vanilla, melted butter and lemon zest.. Whisk until just mixed. Cover with plastic wrap and let sit for 30 minutes.
Line 8- 6 oz ramekins with parchment paper. Pour batter evenly among ramekins. Place a layer of cherries on top. Bake for 30 to 40 minutes, or until golden brown and crisp around the edges. The center should not be quite solid.
Cool for ten minutes. Dust with sugar and garnish with almonds.
