  • 1 tablespoon olive oil

  • 1/2 cup leftover cooked turkey- shredded or chopped

  • 1 tbsp onion- diced

  • 1 tbsp red and/or green bell pepper-diced

  • 1/2 cup boiled potatoes- sliced

  • 2 mushrooms-sliced

  • 1/2 cup grated cheddar or monterey jack

  • 3 eggs, lightly beaten

  • 1/2 cup heavy whipping cream or half and half

  • Salt and pepper, to taste.


  • In a small bowl mix eggs, cream , salt and pepper. Set to the side.

  • Over medium heat, pour olive oil into small non-stick skillet.

  • Add onion and bell pepper and cook for 3 minutes.

  • Stir in potatoes and cook until golden brown.

  • Add cooked leftover meat.

  • Pour egg mixture over the top.

  • Add cheese.

  • Cook until frittata is firm and the bottom starts to brown.

  • With a spatula flip frittata over and cook until golden brown on bottom.

  • Let cool on plate for 5 minutes.

  • Enjoy.
